Tater Tot Casserole..
I made this for the first time last night and Hubby loved he. He requested at least once every 2 weeks. I thought I would share the recipe with everyone.
2 lbs of ground beef
1 large bag of tater tots
16 oz. block of cheese (grated)
10 oz. cream of mushroom
10 oz. cream of chicken
12 oz sour cream
2 cans of corn
Brown the ground beef and season. Layer into 9x13 pan. next layer soups and sour cream. next layer corn then cheese. On top cover with tater tots then add more cheese. cook for 30 minutes at 350 then lower to about 100 and cook for another 3o minutes. Until tater tots are cripsy..

Also here is a brownie recipe I made for Game night last week. I found it in a Diabetic cookbook.
20 ounce brownie mix
peppermint patties ( quartered)
SMALL cupcake liners
1/2 cup water
1 egg
1 tablespoon oil
Combine brownie mix, water, egg and oil. STir till blended. spoon into cupcake liners. Bake at 325 for 20 minutes IMMEDIATELY place peppermint patties on top of each, press down slightly. cool completely...

This looks like it might be a good recipe for diabetics. what are peppermint patties, I am not sure if I have ever seen one?
I bought mint patties..basically the same thing.. chocolate covered mints.
OK I have never tried the tater tot recipe but I am going to copy yours and try...maybe I can feed the crazed teens and quench their hunger for a few hours!lol
